Cake Flavors

With all the choices Brides have today, you may think choosing cake flavors are an easy one.  Not true!  The inside of your cake is sometimes harder to choose than the outside.  Let me suggest NOT making each tier a different flavor because of a couple of reasons.  First, if you are doing a buffet style reception the entire cake will need to be cut up and flavors identified with cards.  Your guests WILL try more than one flavor.  If you doubt me, think of your fiance' walking through a beautiful dessert buffet.  Do you really think he would take only one dessert? Second, if you are doing a plated service the waiters will deliver what was just cut.  They will not explain all the choices and take individual orders.  One table will wonder why they got vanilla cake and the next table got red velvet! 

My suggestions are as follows:  Get the cake flavors you want.  You are not going to please everyone.  Don't stress about this.  It's just dessert! You are feeding them and they won't go hungry.  Next, don't think you have to get white cake with white icing!  If you were ordering dessert at a fancy restaurant, would you order that?  There is no traditional anymore.  I am making more chocolate wedding cakes every year!  Consider the season and your dinner menu.  A spice cake with caramel filling would be great for Fall, but not so much for spring.  Your cake insides can also be color coordinated with your event. This has limitations, mind you.  A black/white/red reception would be nicely complimented with a red velvet cake.  A yellow/orange reception would look great with a lemon and orange cake.  Lastly, you can mix flavors within a tier.  Think of Neapolitan ice cream.  I have three layers in each tier. (Cake 101, a layer goes in a tier.  A tier is an fully decorated cake that is stacked on top of each other to make up the total cake.)  If you love three flavors, like white, lemon, and strawberry then put them together!  They all taste well together and give your guests a great surprise.  I don't charge extra to do this, but every baker is different, so if another baker charges for this, don't be upset with me! If you meet with your baker, but want to try more flavors, just offer to pay for more (without a meeting).  If you think you want a certain combination, ask them to make you a small cake.  I hope you are more informed about your all your choices but not overwhelmed!  Happy tasting!
